INGREDIENTS

1 red onion, halved and thinly sliced

2 Tbsp extra virgin olive oil

Hot red pepper to taste 

2-3 peeled, chopped tomatoes (can use good-quality canned)

4 fresh bay leaves

1 lb (450 grams) cooked white cannellini beans (canned is ok)

White Beans with Fresh Bay Leaves

Simple yet flavorful cuisine is a highlight of our Walking & Cooking in Umbria tour, where you work up an appetite on the trail and learn to cook traditional dishes with farmhouse cooks. The wines are rich and pleasurable, making the simplest dish a taste of pure joy.

Preparation

Sauté the onion and hot red pepper in the oil until soft. Add the tomatoes and fresh bay leaves, cooking over medium heat for 10 minutes. Drain the beans of excess liquid and add to the pan. Lower the heat and cook for 15 minutes. These beans are excellent with grilled meat or game. Serves 4.
